Unless you have a dedicated baker in your neighborhood who bakes conscientiously with a well-seasoned brick oven, this Zojirushi BBCCX20 is a nifty alternative. Not to repeat too much what others have said before me, the double-blade mixing action proves essential when baking wholefood breads (10-grain flower, pumkin & sunflower seeds, flax kernels, bran flakes etc.); a single-blade machine just has a difficult time mixing those ingredients evenly. A thoroughly and evenly mixed bread dough bakes evenly.The Zojirushi is also easy to clean. A well-designed machine. Looking at some of the negative reviews posted online for the various machines, I would recommend to very carefully follow the instructions and recipes until you have gained enough experience with breadmakers. Use the best ingredients you can get your hands on for your baking endeavours. Use only the ingredients the recipe call for (unless you are familiar with a recipe), have them fresh and – not to forget – at the right temperature.
